Dai pai dong are Hong Kong's traditional open-air cooked food stalls — large metal tables, plastic stools, roaring wok flames, and dishes served at speed to a rotating crowd of regulars. Once common across the city, strict licensing has reduced their numbers to a handful of designated areas. The most famous concentration is on Graham Street in Central and in the Cooked Food Centres of Mong Kok and Temple Street. Classics include stir-fried beef ho fun, typhoon shelter crab, and clay pot rice. Eating at a dai pai dong is an essential Hong Kong experience.
